Eli and I

Christmas 2010...

We had Christmas with my family. We ate lots of good food and shared the special weekend with my folks. It was Eli's first Christmas and he truly got spoiled! Santa brought many sweet presents to Skyler since he was not on his naughty list! I Love Christmas because of the FOOD.....yes, im a pig! The best present I got for Christmas was a recipe to some yummy healthy cookies!
Its great because they can be healthy, and has lots of fiber! Here it is:

(p.s. If you love carrot cake, you'll love this!)

"Carrot & Apple Booskies"

3 cups of thin shredded carrots
2 cups of shredded apples
3 cups of oats
2 cups of white flour
1 cup of wheat flour
1 cup of oil
2 eggs
5 tsp cinammon
1 1/2 cup of brown sugar
1 tsp salt
1 tsp baking soda
2 1/2 tsp baking powder
1 tsp vanilla
*optional*
any kind of nuts (I always use sliced almonds)
raisens

Preheat oven at 375. Mix all ingredients together and form your cookies into small balls then flat them out a little bit. (I use a 2 tblsp measuring spoon) Then bake them for 10-15 minutes.  I like to let them cool off then drizzel white chocolate on top.....YYYUUUMMMYY!

Let me tell you, my son who is a super picky eater, LOVES these cookies!

This recipes makes about 64 cookies....
